RAW PECAN PIE ENERGY BALLS

If you love pecan tarts and pies, then these raw pecan pie energy balls are the perfect little raw treat to fill that craving!

Deliciously healthy, these no-bake energy balls are quick and easy to make, gluten-free, only four simple ingredients (not including salt), contain no added sugars, and can be stored in the refrigerator or freezer for a lengthy amount of time.

These are great given as gifts, taken to parties or just to have around the house for a quick and healthy treat!

Ingredients You’ll Need

In the recipe, a flavorful mix of pecans, dates, cinnamon, and vanilla are processed into a thick dough and rolled into healthy energy balls for a delicious snack or dessert.

Here is everything you will need:

  • Pecans – adds a rich flavor and texture to these raw energy bites.
  • Medjool dates – are naturally sweet and best when fresh and soft.
  • Cinnamon – is a healthy flavor enhancer.
  • Vanilla – adds another layer of flavor. 

Finish each ball by rolling in any of these optional ingredients:

  • Shredded coconut
  • Cinnamon
  • Cocoa powder
  • Almond meal or flour
  • Crushed graham crackers
  • Or sprinkle with mineral salt

Only simple, wholesome ingredients that roll into delicious raw energy balls!

How To Make Pecan Pie Energy Balls

  • Mix ingredients. Simply place ingredients in a food processor and process until it just becomes combined. Ideally, you want your dough to have visible pieces of nuts (but you can also process until smoother, see notes in recipe card). The mixture should stick together when you pinch it.

  • Roll dough into balls. Scoop and roll dough into 1 inch balls, recipe will yield about 12 truffles (shown above).
  • Add a finishing touch. Roll in any one or mix of optional ingredients if desired for a finished look. I have them rolled in almond meal, coconut flakes, and mineral salt (see picture below). My favorites (not shown here) are ones rolled in mineral salt. A salted raw pecan tart truffle, so good!

And now you have a simple, healthy snack or dessert to enjoy any time of day!

Top Tips

  • Uniformity. Keep the mounds uniform in size by using a scooper like this 1 tablespoon measuring spoon (affiliate link), it’s super helpful and makes things easier!
  • Wash your hands. If the dough starts to stick to the palm of your hands when rolling, wash them in between every few balls for ease.
  • Adjust the ingredients. Lower the fat content on these by subbing in 1/2 cup rolled or quick-cooking oats for some of the pecans. I do this for most of my other raw treats but kept this one all nuts. You could even go as much as 3/4 cup oats and 3/4 cup pecans.

How To Store

  • Refrigerator: Store in the refrigerator, in an airtight container, for up to 2 weeks (may last even longer).
  • Freezer: For longer storage, keep in the freezer for up to 2 – 3 months. To freeze, place the balls on a baking sheet or plate, about 1 inch apart, place them in the freezer for a few hours (this will help them not stick together). Once frozen you can store them in freezer-safe ziplock bags or containers. Let thaw in the refrigerator a few hours before snacking.

Ingredients

Scale
  • 1 1/2 cups pecans
  • 1 cup medjool dates (about 12), pitted and chopped (fresh is best)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • pinch of salt, optional

  • shredded coconut
  • almond meal or flour
  • crushed graham crackers
  • freshly ground mineral salt
  • cinammon
  • cocoa

Instructions

Mix: Place ingredients in bowl of a food processor and process until it just becomes combined. Ideally you want your dough to have visible pieces of nuts (but you can also process until smoother, see notes). If it seems too dry, add 1 – 2 tablespoons of water while blending. It should stick together when you pinch it.

Roll: Using a 1 tablespoon measuring spoon, scoop out rounded tablespoons and roll dough into 1 inch balls.

Finishing coat: Roll in any one or mix of the optional ingredients if for a finished look.

Store: Keep in the refrigerator for up to 2 – 3 weeks (may even last longer). Freeze for up to 2 – 3 months, let thaw before serving.

Makes about 12 energy balls

Notes

To lower the fat content on these try subbing in 1/2 cup rolled or quick cooking oats for some of the pecans. I do this for most of my other raw treats but kept this one all nuts. You could even go as much as 3/4 cup oats and 3/4 cup pecans.
