This Curried Chickpea ‘Chicken’ Salad Sandwich is a blend of mashed chickpeas, carrots, green onions, and raisins (trust me they’re delicious!) all mixed together with a creamy customizable curry dressing and served on your favorite bread with a few leafy greens.

How To Make Curried Chickpea Salad Sandwich

What you’ll need:

Layer the bottom slice of bread with curry chickpea salad, top with a few cilantro sprigs (or just the leaves), and greens of choice. Add top slice to sandwich, cut in half or eat as is.

    This is amazing. I love sandwiches, but this is actually better served with crackers (or homemade garlic bread twists/sticks) on a bed of lettuce. I’m a bread addict. I have baked my own for decades because I’m fussy and pretty much a bread snob. This salad though, it deserves star billing.
