Add the carrots, mushrooms, squash, and seasonings..

Saute the vegetables for 5 - 7 minutes, set aside.

In a medium bowl, mix together the vegan ricotta and spinach.

Layer bottom of baking dish with 1/3 sauce, lasagna noodles, and 1/2 spinach ricotta.

Add layer of 1/2 of the veggie mix.

Add layer of noodles, 1/2 of sauce and remaining spinach ricotta.

Add remaining veggies, layer of noodles and rest of the sauce.

Cover and bake on the center rack for 40 minutes. Above is finished lasagna.
