Sautee the onion, carrots, and celery for 10 min. Add herbs & spices, saute 1 min.

Add the black eyed peas, tomatoes, and broth, simmer for 20 minutes to 1 hour.

Towards the end of cooking, stir in the collard greens, cook until softened.
