Vegan Frittata is a great way to use up leftover vegetables to make an easy and inexpensive vegan meal that works for breakfast, lunch or even dinner!

Add 'egg' mixture ingredients to the bowl of a food processor or blender.

Blend until creamy. Taste for seasoning, adding more as needed.

Saute the onion, garlic, carrots, zucchini, potato, and tomatoes for 10 min.

Pour the tofu mixture into the veggies. Gently mix to combine.

Add the mixture to a spring pan or pie dish, filling edge to edge.

Bake for 35 - 40 minutes. Cover if top starts to browns too much.

Let cool 10 - 15 minutes. Remove from pan and enjoy!
