Prep the bell peppers, onion, celery, and garlic.

Add the tomatoes, rice, bay leaves, and veg broth, bring to a boil.

Turn down heat, cover, and simmer for 20 - 25 minutes.

Add beans and cooked vegan sausage, cook 5 minutes more.
