Cut off the very top of each bell pepper. Remove core and seeds.

Cook the onion, garlic, and tempeh for 7 - 10 minutes.

Add the squash, mushrooms, herbs, and tomato sauce. Cook 2 - 3 minutes.

Stir in the rice and remove from heat.

Fill each pepper with the veggie stuffing. Optionally, top with shredded cheese.

Cover and bake for 35 - 40 minutes. Remove cover in the last 5 minutes.
