CRANBERRY ALMOND ENERGY BITES (NO BAKE)

Naturally sweetened and so easy to make, no bake Cranberry Energy Bites with almonds, cranberries and oats are a healthy, wholesome treat perfect for snacking or dessert!

Ingredients

  • 1 cup raw almonds
  • 1 cup dried cranberries
  • 1 cup old fashioned oats
  • 1/2 cup shredded coconut
  • 1/2 cup pure maple syrup or 1 cup pitted medjool dates (11 – 12), chopped
  • 1 teaspoon vanilla
  • pinch of salt

Instructions

Blend: Add ingredients to the bowl of a food processor and blend until mixed well and crumbly, stopping to scrape down the sides as needed.

Chill: Place the mixture in the refrigerator for about 20 minutes to let it stiffen up a bit.

Scoop and roll: Using a 1 tablespoon measuring spoon, scoop up rounded mounds of and roll into 1 inch balls.

Add finishing touch. For a more finished look and to keep the dough from sticking to your fingers, roll the energy bites in shredded coconut or almond flour.

Makes about 20 energy bites

Store: Keep stored in an airtight container in the refrigerator for up to two weeks. To keep longer, store in the freezer for up to 2 – 3 months. Let thaw before eating.

Notes

Adding 1/4 cup of mini dark chocolate chips or cacao nibs would also be great in this recipe.

Fresh chopped cranberries are my favorite in this recipe. They add a nice light tartness that blends well with the spices and dates. If using fresh cranberries, eat within 7 days.
