Spicy Mango Salad Dressing is a quick and easy recipe made with 5 simple ingredients! It’s a fresh, healthy, and delicious! Vegan + oil-free.

Ingredients

  • 1 large ripe mango (about 2 cups), cut into cubes or slices
  • 1 clove garlic
  • 1/4 cup apple cider vinegar
  • 2 tablespoons water (or more acv)
  • 1/2 teaspoon red pepper flakes (or to taste)
  • pinch of mineral salt

Instructions

To the bottom of a blender cup or food processor bowl, add the mango, garlic, apple cider vinegar, water, red pepper flakes, and salt. Process until smooth and blended, about 1 minute.

Makes about 1 1/4 cups.

Serves 2 – 4

Store: Keep stored in an airtight container in the refrigerator for up to 5 – 6 days. Will also keep in the freezer for up to 2 – 3 months in freezer safe containers. Let thaw before using.

Ways to use: Rainbow Salad, Super Spinach Salad, or Grilled Tofu Skewers

Notes

Using frozen mangoes, simply let thaw before using.

Flavor variations:

  • Herbs – add 2 – 3 tablespoons cilantro for a herbaceous flavor.
  • Citrus – add 2 – 3 tablespoons of lemon, orange, or lime for a burst of citrus.
  • Ginger – throw in a 1 inch knob of grated or minced ginger for a wonderful twist of flavor.
