5-INGREDIENT KIELBASA with PEPPERS & POTATOES

Serve this 5-ingredient vegan kielbasa sausage with peppers, potatoes, and onions with roasted corn and a simple side salad for a healthy and filling meal!

Ingredients

  • 3 tablespoons olive oil, divided
  • 1 1/2 lbs. baby potatoes (red or gold), quartered or diced into 1/2-inch cubes
  • 1 medium onion (Vidalia, white, brown, or red), thinly sliced
  • 1 package (14 oz.) kielbasa sausage, sliced (I used Tofurkey)
  • 2 medium bell peppers (1 red & 1 green)
  • 1/2 teaspoon mineral salt
  • 1/2 teaspoon fresh cracked pepper

Instructions

Toss the potatoes with 1 to 2 tablespoons olive oil, and set aside. Optionally, add 1 teaspoon of garlic powder or herb of choice mixed in with the potatoes.

Saute: In a large pan, heat 2 tablespoons olive oil over medium. Add the onions and saute for 4 minutes. Add the bell peppers, vegan sausage, and salt & pepper, and continue to saute for another 4 minutes.

Cook: Add the potatoes and give a good stir. Cover and cook for 15 – 20 minutes to steam the potatoes, stirring occasionally. Remove the cover, increase the heat to medium-high, and continue cooking for 5 minutes. Season with more salt and pepper to taste.

Serve with grilled corn on the cob and a fresh House Salad. It would also be great with these Baked Beans, Vegan Potato Salad or Classic Vegan Coleslaw, making a terrific, well-balanced lunch or dinner!

Serves 4

Store: Leftovers can be stored in a sealed container in the refrigerator for up to 5 days. Reheat on the stovetop or microwave. I don’t recommend freezing.

Notes

The smaller you cut the potatoes, the faster they will cook. I cut mine into 1/2 pieces.

Try using poblanos or Anaheim chilis in place of bell peppers.

Add dried herbs such as thyme, herbs de Provence, or parsley for added flavor. Stir it in with the potatoes. Adding fresh parsley at the end of cooking will add freshness and herbaceousness.
