Vegan Kielbasa with Peppers & Potatoes (5 Ingredients)

Vegan Kielbasa Sausage with Peppers and Potatoes is a super simple and easy-to-make crave-worthy recipe with just 5 ingredients!

I love easy meals, and this classic simple recipe with hearty vegan sausage and tender potatoes, bell peppers, and onion is perfect any time of year. For a plant-based meal, it covers all the bases and is nutritionally complete!

I don’t eat processed vegan foods often, but every now and then, I do get a craving for an old-style recipe that I grew up with. When kept to a minimum, store-bought vegan sausage hits the spot. See my favorites in the ingredient notes below!

And this is where I come in to tell you how delicious it is, seriously! Honestly, I was surprised at how flavorful it was without using herbs or spices. It’s super simple with just mineral salt and fresh cracked pepper. And frankly, it’s just perfect (but of course, you can add herbs as noted)!

This is a great dish for parties, potlucks, and BBQs. Pair it with any of the classic American side dishes, such as corn on the cob, coleslaw, macaroni salad, or house salad, and it makes a filling meal. It’s a tasty combination, and I think you’ll love it, too!

Ingredients You’ll Need

In this recipe, plant-based sausage, bell peppers, potatoes, and onion are sauteed and steamed until tender with salt and pepper for a simple yet flavorful, vegan main dish.

Here is everything you will need:

  • Baby potatoes: Use red or gold.
  • Bell pepper: I used red and green, but any color will do.
  • Onion: I highly recommend using sweet Vidalia. Also, regular white or brown with be great too.
  • Vegan kielbasa sausage: I’ve used Tofurky here, but you can also use other store-bought brands, such as Field Roast.
  • Salt + pepper: This is the only seasoning so use as much as you like.

How To Make Kielbasa Peppers & Potatoes

This is a step-by-step overview, the measurements and full printable instructions are below.

Toss the potatoes with 1 to 2 tablespoons olive oil, and set aside. Optionally, add 1 teaspoon of garlic powder or herb of choice mixed in with the potatoes.

In a large pan, heat oil over medium. Add the onions and saute for 4 minutes. Add the bell peppers, sausage, and salt & pepper, and continue to saute for another 4 minutes.

Add the potatoes and give a good stir. Cover and cook for 15 – 20 minutes, stirring occasionally. This will help steam the potatoes into tenderness. Remove the cover, increase heat to medium-high, and continue cooking for 5 minutes. Season with more salt and pepper to taste.

And now you are ready to dine!

This simple dish with tender sausage and veggies can be served at any time of the year, no matter the occasion!

Top Tips

  • The smaller you cut the potatoes, the faster they will cook. I cut mine into 1/2 pieces.
  • For variation, poblanos or Anaheim chilis in place of the sweet peppers would be delicious.
  • The vegan sausage I used was Tofurky, but Field Roast is also fantastic. I just used what was available at the time, but you can use your favorite.
  • Add herbs, such as dried thyme, herbes de Provence, garlic, or onion powder.

Serving Suggestions

We love serving with fresh grilled corn on the cob and a cool refreshing House Salad on the side.

It would also be great with a side of these delicious Healthy Baked Beans, Vegan Potato Salad, Vegan Macaroni Salad, or Classic Vegan Coleslaw, making a terrific well-balanced lunch or dinner.

How To Store + Reheat

Refrigerator: If you manage to have leftovers, they can be stored in a sealed container in the refrigerator for 5 days. Reheat on the stovetop or in the microwave.

Freezer: I don’t recommend freezing because it will not be as good. It is best eaten within a few days.

Ingredients

Scale
  • 3 tablespoons olive oil, divided
  • 1 1/2 lbs. baby potatoes (red or gold), quartered or diced into 1/2-inch cubes
  • 1 medium onion (Vidalia, white, brown, or red), thinly sliced
  • 1 package (14 oz.) kielbasa sausage, sliced (I used Tofurkey)
  • 2 medium bell peppers (1 red & 1 green)
  • 1/2 teaspoon mineral salt
  • 1/2 teaspoon fresh cracked pepper

Instructions

Saute: In a large pan, heat 2 tablespoons olive oil over medium. Add the onions and saute for 4 minutes. Add the bell peppers, vegan sausage, and salt & pepper, and continue to saute for another 4 minutes.

Cook: Add the potatoes and give a good stir. Cover and cook for 15 – 20 minutes to steam the potatoes, stirring occasionally. Remove the cover, increase the heat to medium-high, and continue cooking for 5 minutes. Season with more salt and pepper to taste.

Serve with grilled corn on the cob and a fresh House Salad. It would also be great with these Baked Beans, Vegan Potato Salad or Classic Vegan Coleslaw, making a terrific, well-balanced lunch or dinner!

Notes

Try using poblanos or Anaheim chilis in place of bell peppers.

Add dried herbs such as thyme, herbs de Provence, or parsley for added flavor. Stir it in with the potatoes. Adding fresh parsley at the end of cooking will add freshness and herbaceousness.

  1. Loving it..I’ve made this a few times now. I did add frozen organic green beans to the recipe. I couldn’t find tofurky at first so I substituted Beyond Sausage , plant based links. I enjoyed it very much.

  3. Super easy, delicious recipe. Thanks to a pack of precut pepper strips, all I had to do was slice the Tofurky kielbasa and I seasoned and roasted some potatoes in my air fryer. Love it! This will be a staple in our rotation!
