Arugula is spicy, and versatile. It’s a wonderful leafy green that is great in fresh salad, pasta, sandwiches, and added to hot soups. Find some of my favorite vegan recipes using this fresh green.
Healthy Tip: When purchasing, look for tender greens, with even color. Stay away from arugula that is yellowing, or wilting. If needed, a quick dunk in cold water can help revive arugula that is a little sad.
