Kale, the king of the leafy greens!
Some love it, some not so much, but I think we can all agree that kale is a nutritional power house. Its nutritional benefits include calcium, iron, vitamin K, A, and C. Kale is available in different varieties, such as, lacinato, curly, purple, tuscan, dinosaur, and a few others. You can also find packaged baby kale in the salad section, which I love and use often.
Here you'll find plenty of inspiration on how to use this 'superfood'!
Healthy Tip: Full-grown kale can be a bit tough when eating raw in salads. Soften the kale first by tossing it with lemon juice, or the dressing you're pairing it with, and let rest for 15 - 30 minutes, tossing occasionally.
