How To Make Curried Chickpea Salad Sandwich

- curried chickpea salad (recipe serves 4 – 6)
- cilantro, leafy or microgreens, to serve
- 2 slices whole grain or artisan bread per sandwich or 1 pita to serve
Layer the bottom slice of bread with curry chickpea salad, top with a few cilantro sprigs (or just the leaves), and greens of choice. Add the top slice to a sandwich, cut it in half, or eat it as is.

This is amazing. I love sandwiches, but this is actually better served with crackers (or homemade garlic bread twists/sticks) on a bed of lettuce. I’m a bread addict. I have baked my own for decades because I’m fussy and pretty much a bread snob. This salad though, it deserves star billing.
