Those with nightshade allergies can be sure these vegan recipes exclude the following (or have an option to omit them):
- Tomatoes
- Tomatillos
- Potatoes (except sweet potatoes and yams)
- Eggplants
- Peppers (bell peppers, banana peppers, chili peppers, etc.)
- Red pepper seasonings (paprika, chili powder, cayenne, curry, etc.)

Recipe Maker Note: I use red pepper flakes often (even if only for photo presentation), but they can be omitted. Also, if a recipe calls for just 1 chili pepper or 1 bell pepper, it’s in this collection but can be omitted.
